Mushroom powder
Dried mushrooms ground to dust, used as a seasoning.
Why
Powdered dried mushroom is pure glutamate and it does to a dish what anchovy or parmesan does. Black trumpet powder in particular is close to truffle at a fraction of the price, and it keeps for a year in a jar.
How
- 01Dry until brittle. Anything with any flex left will gum up a grinder rather than powder.
- 02Grind in a spice or coffee grinder in short bursts. Let the dust settle before opening the lid, or you will lose half of it into the room.
- 03Sieve, and re-grind the coarse fraction.
- 04Use in pasta dough, in a burger mix, on popcorn, in a cream sauce, or stirred into stock.
